Ideal for those new to keto—as well as those on the program who want fast and easy meal options—this hearty collection provides a useful primer on everything from weight loss tips and stocking the kitchen (replacing pasta with kelp noodles and whole milk with plant-based options) to keto-friendly sweeteners (such as monk fruit) and weekly meal plans. As an added plus, she organizes meals into 11 categories—and divides main dishes by their proteins—making it simple to find recipes that work with whatever’s on hand. From almond-flour biscuits and gravy to herbed flatbread made with pork rinds, modified versions of carb-laden favorites abound. Also included are a wealth of soups, sides, and entrées including seafood options such as a crispy pan-fried sea bass and crab imperial. Marcaurele’s creative genius, however, shows in her appetizing array of desserts; her chocolate lava cakes, key lime tarts, and quick tiramisu trifle alone make this collection superior to other carb-light offerings. While the majority of recipes serve two, most can easily be doubled or tripled, and nearly all dishes need only about 15 minutes of prep time.
